[Keyboard] Convert ErgoDox EZ to Matrix Lite (#10189)

* Convert ErgoDox EZ to lite matrix

* Add initial config from Dactyl config

Based on ErinCall's work to generalize the mcp i/o expander matrix code

* formatting

* Fix number of pins

* Remove unused defines
