[Keyboard] Minor Aurora Sweep fixes (#18879)

- Fixes compile error with `SWAP_HANDS_ENABLE = yes`
- Fixes OLED, RGB Matrix, and encoder when using QMK Configurator

Additionally, custom configuration options are still being worked on: if your keymap depends on them, please compile your firmware offline for now._
